Refreshing Watermelon and Cucumber Salad

INGREDIENTS
1¾ cup - Watermelon, diced
150g - Cucumber, with peel, diced
100g - Ricotta cheese, crumbed
4g - Fresh mint
1 tb - Orange juice
1 tb - Extra virgin olive oil
1 tb - Chia seeds
4 tb - Roasted pumpkin seeds
UTENSILS
Mixing bowl, Chopping board, Knife
INSTRUCTIONS
1. Soak the chia seeds in warm water for 15 mins. Drain away the excess water using a strainer.
2. Combine the watermelon, cucumber, ricotta cheese, soaked chia seeds and mint leaves in a large bowl.
3. Drizzle with extra virgin olive oil and orange juice. Toss to coat evenly.
4. Garnish with roasted pumpkin seed on top and serve.
