Stir-fried Prawns and Basil with Brown Rice

INGREDIENTS
6 - Bird’s eye chilies, raw
6 cloves - Garlic, raw, peeled
1 tb - Vegetable oil
200g - Prawns, peeled and deveined
1 tsp - Oyster sauce
¼ tsp - Fish sauce
1 cup - Holy basil
1 ⅓ cup - Brown rice, cooked
UTENSILS
Wok, Mortar and pestle, Chopping board, Knife
INSTRUCTIONS
1. Bruise the garlic and chilies using a mortar and pestle.
2. Heat the oil in a wok over high heat. Add the garlic and chilies and stir-fry for 30 seconds.
3. Add the prawns and stir-fry until almost cooked. Add the oyster sauce, fish sauce and sugar and stir-fry for another 1 minute until the prawns are cooked.
4. Turn off the heat and add the basil. Toss to mix well.
5. Serve with steamed brown rice.
