Scrambled Egg with Tofu

INGREDIENTS
2 tsp - Olive oil
1 pc - Chicken egg, whole, raw
1 tb - Soy milk, plain, low fat
1 tbsp - Onions, raw, finely chopped
50g - Firm tofu, crumbled
3 pcs - Cherry tomatoes, halved
½ small - Avocado, raw
1 dash - Salt
1 pinch - Black pepper
UTENSILS
Saucepan, Chopping board, Knife
INSTRUCTIONS
1. Beat the egg and soy milk in a bowl until well combined. Set aside.
2. Heat the oil in a saucepan over medium heat. Add the onions and sauté until light brown.
3. Add the crumbled tofu and sauté until light brown. Add the cherry tomatoes and sauté for 2 –3 minutes.
4. Add the egg mixture and season with salt and pepper. Stir until the egg thickens and no visible liquid egg remains about 3-5 minutes.
5. Transfer to a serving plate and serve with sliced avocado on the side.
