INGREDIENTS
½ tb - Vegetable oil
3 cloves - Garlic, minced
½ tsp - Ginger, minced
100g - Chicken breast, minced
½ - Onion, finely chopped
1 - Carrot, finely chopped
150g - Water chestnuts, canned, drained and finely chopped
5 - Baby corn, finely chopped
5 - Shiitake mushrooms, dried, soaked, finely chopped
9 - Lettuce leaves, large
1 tb - Peanuts, crushed
1 tb - Scallion, finely sliced
Sauce ingredients
1 ¼ tsp - cornstarch
3 tb - Water
½ tb - light soy sauce
½ tb - oyster sauce
1 tsp - sesame oil
1 tb - Chinese cooking wine
UTENSILS
Wok, Bowl, Chopping board, Knife
INSTRUCTIONS
1. Mix the cornflour with 1 tablespoon of water in a small bowl. Add the remaining sauce ingredients and mix well.
2. Heat the oil in a wok over high heat. Add the garlic and ginger, give it a quick stir then add the onion. Cook for 1 minute.
3. Add the minced chicken. Cook until it turns white.
4. Add the mushrooms, carrot, water chestnuts and baby corn. Cook for 2 minutes until the carrot is softened and the chicken is cooked through.
5. Add the sauce and cook for 2 minutes until it thickens.
6. Transfer the filling into a bowl. Lay out the lettuce leaves, peanuts and scallions on the side.
7. Spoon some filling onto a lettuce leaf. Top with peanuts and scallions. Serve.
