Pork Meatballs Soup

INGREDIENTS
300g - Lean ground pork
2 tb - Spring onion, raw, finely chopped
2 pcs - Garlic, cloves, minced
20g - Ginger root, raw, minced
½ tsp - Salt, table
½ tsp - Pepper, black
4 ½ cup - Hot water
1 pc (7-½" - 8" long) - Celery, stalk, coarsely chopped
1 ½ cup - Peas, green, frozen, raw
2 cup - Rice, brown, medium-grain, cooked

INSTRUCTIONS
1. Combine the ground pork, green onions, garlic, ginger, salt and pepper in a bowl. Mix well and shape the mixture into a bite-size meatballs using the palms of your hands.
2. In a cooking pot, add the hot water, meatballs and celery. Cover and bring the mixture to a boil. Reduce heat to medium and simmer for 10 minutes.
3. Skim the fat off the top of the broth and discard.
4. Add the green peas and cooked brown rice. Continue to simmer for five minutes or until the centre of the pork meatballs is no longer pink.
5. Remove from the heat, ladle into the serving bowls and serve.
