Mixed Bean Salad

INGREDIENTS
1 cup - Black beans, canned, drained and rinsed
1 cup - Kidney beans, canned, drained and rinsed
1 cup - Chickpeas, canned, drained and rinsed
1 - Red capsicum, diced
1 - Green capsicum, diced
1 - Red onion, diced
¼ cup - Fresh cilantro, chopped
1 lime - Lime juice
2 tb - Olive oil
¼ tsp - Salt
¼ tsp - Black pepper
UTENSILS
Large bowl, Small bowl, Chopping board, Knife
INSTRUCTIONS
1. Combine the black beans, kidney beans, chickpeas, capsicums, cilantro and red onion in a large bowl.
2. Whisk the lime juice, olive oil, salt and black pepper in a small bowl.
3. Pour the dressing over the salad and toss well to combine.
4. Serve immediately or chill before serving.
