Fruity Couscous Salad

INGREDIENTS
½ cup - Couscous, dry
1 cup - Hot water
½ cup - Juice, 100% juice, pineapple, unsweetened (hot)
2 pcs - Kiwifruit, green, peeled and diced
1 cup - Raspberries, frozen, thawed
½ cup - Tangerines,(mandarin oranges), canned, drained
1 tb - Herbs, mint, finely chopped
4 tsp - Sugars, maple
¼ cup - Nuts, almonds, roasted, with skin, unsalted, coarsely chopped
UTENSILS
Bowl with lid, Chopping board, Knife, Fork
INSTRUCTIONS
1. Combine couscous, hot water and hot pineapple juice in a bowl. Cover with a lid and allow to soak for 20 minutes.
2. Fluff the couscous with a fork and allow to cool it down.
3. Add the kiwi, raspberry, tangerines, herb mint, maple syrup, almonds and mix well.
4. Serve.
