Cucumber and Tomato Salad with Mint Yogurt Dressing

INGREDIENTS
1 - Cucumber, diced
2 - Tomatoes, diced
3 - Red onion, thinly sliced
¼ cup - Mint leaves, chopped
¼ cup - Coriander leaves, chopped
1 cup - Yogurt, low fat
1 tb - Lemon juice
¼ tsp - Salt
¼ tsp - Black pepper

INSTRUCTIONS
1. Combine the cucumber, tomatoes and red onion in a mixing bowl.
2. In a separate bowl, mix the yogurt, lemon juice, mint, salt and pepper until well combined.
3. Drizzle the mint yogurt dressing over the salad and toss gently to coat the vegetables.
4. Serve chilled alongside the biryani for a refreshing side.
