INGREDIENTS
1 pc - Small yam bean (jicama),raw
½ cup - Beans, kidney, red, canned, drained solids, rinsed in tap water
1 cup - Corn, sweet, yellow, canned, drained solids, rinsed with tap water
½ pc - Large peppers, sweet, yellow, raw
1 pc - Medium tomato, Roma, raw
½ cup - Coriander (cilantro) leaves, raw
1 pc - Lime, juiced, raw
1 pc - Small, avocado, raw
1 dash - Salt, table
1 pinch - Pepper, black
UTENSILS
Chopping board, Knife, Bowl
INSTRUCTIONS
1. Combine the jicama, red beans, corn, yellow bell pepper, tomato, coriander and lime juice in a bowl. Toss to coat evenly.
2. Add the avocado and season with salt and pepper to taste. Mix again and serve.
