Broccoli Egg Bhurji

INGREDIENTS
4 - Chicken eggs
2 cups - Broccoli, cut into small florets
2 - Onions, finely chopped
2 - Tomatoes, finely chopped
5 cloves - Garlic, finely chopped
1 tsp - Turmeric
2 tsp - Chili powder
2 tb - Coriander (cilantro) leaves, raw, finely chopped
⅛ tsp - Salt
½ tb - Vegetable oil
UTENSILS
Knife, Chopping board, Pan, Spatula
INSTRUCTIONS
1. Heat the oil in a frying pan. Add the finely chopped onions. Sauté for 2 minutes.
2. Add the chopped garlic and sauté for another minute.
3. Add the chopped tomatoes and sauté until they turn mushy.
4. Add the broccoli florets and cook for 5 minutes.
5. Add the turmeric powder, red chili powder and salt. Stir to mix well.
6. Break the eggs directly into the pan.
7. Once the eggs getting cooked, use a spatula to scramble them continuously until the eggs are finely minced and mixed well with the rest of the ingredients.
8. Garnish with the chopped coriander leaves.
9. Serve hot with the toast.
