Black Bean and Corn Salad

INGREDIENTS
450g - Black beans, canned, drained and rinsed
1 cup - Corn kernels, frozen
1 - Yellow capsicum, diced
½ - Red onion, diced
1 - Jalapeño pepper, seeded and minced
¼ cup - Fresh cilantro, chopped
2 limes - Lime juice
1 tb - Olive oil
1 tsp - Ground cumin
¼ tsp - Salt
¼ tsp - Black pepper
UTENSILS
Whisk, Mixing Bowl, small bowl, Chopping board, Knife
INSTRUCTIONS
1. Combine the black beans, corn kernels, capsicum, red onion, jalapeño pepper, and cilantro in a large mixing bowl.
2. Whisk together lime juice, olive oil, ground cumin, salt and pepper in a small bowl.
3. Pour the dressing over the black bean and corn mixture. Toss until well combined.
4. Serve immediately or serve chilled.
